The scent and the taste of elder flowers for me is clearly related to the beginning of summer! Sweet and intense! So let´s bring some summer into the kitchen! The Name of this recipe is already telling you all ingredients, which you`ll need for the preparation. It is really simple. When gathering the elder flowers, make sure not to take them near big roads. Otherwise there will be exhaust fumes in your water later. The elder blooms from the begin of May until end of June. The elder flowers have a richer taste, when gathered after good weather periods. The outcome of this recipe is very refreshing.
Elder Flower Lemon Water
2 elder flower umbels
1 untreated lemon
2 Liter of fresh water
Wash the lemon under hot water. Cut it into thin slices. Add everything into a pot or a bowl which you can cover. Leave it there over night. You can also use the ingredients for another infusion.
I really enjoy wandering through the garden, searching for wild plants to eat. There are so many. They may seem like unwanted guests first, but if you take a closer look, you want them there. Believe me.
This recipe originates in the situation of having picked way too many nettles. What to do. They are better used soon after being picked, because otherwise they get limp very fast.
These crackers came out very nice and flavorsome. Enjoy !
4 cup nettle leaves
1/2 cup sunflower seeds
1/2 cup flax seeds
1/4 cup melted coconut oil
1 tsp psyllium seeds in 3 tsp water
1/2 tsp salt
1/2 tsp honey
Add the psyllium seeds to the water and set aside.
Put the seeds in your food processor first. Pulse a few times. Then add the nettle leaves and mix until the nettles are broke down to small pieces. Add all other ingredients and mix until it becomes a dough-like consistency.
With a rolling-pin, between to sheets of baking paper, roll the dough approx. 5mm thick.
Cut the dough in pieces as big as you want them to be.
Bake in oven 180° C for approx. 15 min.
You can also prepare these crackers in you dehydrator (if you are lucky to own one) to make them raw.
Spicy Tomato Sauce (raw)
2 ripe tomatoes
1 small onion
1 tsp agave sirup
1 tsp chili powder
Salt to taste
Blend all ingredients and adjust taste to your liking.
